  • 2 tsp extra-virgin olive oil
  • 1 Tbsp maple syrup
  • 1 cup raw pecans
  • 1 tsp finely chopped fresh rosemary
  • ⅛ tsp sea salt
  • Butternut Squash
  • 1 small butternut squash, peeled and cubed (3–4 cups)
  • Extra-virgin olive oil, salt, and pepper
  • Shallot Dressing
  • 3 Tbsp extra-virgin olive oil
  • 1 Tbsp Dijon mustard
  • 1 Tbsp red-wine vinegar
  • 1 Tbsp maple syrup
  • 1 Tbsp minced shallots
  • ⅛ tsp sea salt
  • Salad Assembly
  • 12 oz kale, destemmed and thinly sliced
  • 1 cup pomegranate seeds
  • 4 oz crumbled feta or goat cheese (optional)
  • 3–4 cups roasted butternut squash
  • 1 cup maple-rosemary pecans, coarsely chopped

Method

  1. Preheat oven to 350 °F (175 °C). In a small bowl, combine olive oil and maple syrup. Add pecans, rosemary, and salt; toss to coat. Spread on a baking sheet and bake 10 minutes, stir, then bake 5–10 minutes more until golden. Cool completely.
  2. Increase oven temperature to 425 °F (220 °C). Toss squash cubes with olive oil, salt, and pepper. Roast 40 minutes, stirring halfway, until tender and caramelized.
