Easy Coconut Peanut Sauce

Sweet potato noodle bowl drizzled with coconut peanut sauce.

A creamy, balanced peanut sauce made with coconut milk, lime, and fresh ginger. It’s simple, versatile, and supportive of digestion — the kind of staple that makes eating well feel easy.

Why You’ll Love It

There’s something grounding about having one really good sauce in your fridge. It turns whatever you already have — roasted vegetables, grains, greens, or leftover protein — into a full meal without planning ahead.

This coconut peanut sauce does exactly that. It’s creamy and rich but still light, with the perfect mix of salt, spice, and acidity.

Digestive Benefits

Every ingredient in this sauce supports digestion in a subtle way:

  • Coconut milk and peanut butter add satisfying fats, while peanut butter also provides plant-based protein.

  • Fresh ginger supports healthy gastric motility and has a long history of use for digestive discomfort.

  • Lime juice adds acidity that balances the richness of the coconut milk and peanut butter.

  • Maple syrup adds just enough sweetness to balance the salt, spice, and acidity.

It’s rich enough to feel satisfying and balanced enough to support your gut.

Ingredient Notes

  • Peanut Butter — Choose creamy, unsweetened peanut butter. Almond or cashew butter both work as substitutions.

  • Coconut Milk — Full-fat canned coconut milk makes the sauce silky. Shake the can before opening so the cream and water combine evenly.

  • Soy Sauce or Coconut Aminos — Both bring depth and saltiness. Use coconut aminos for a gluten-free or soy-free option.

  • Lime Juice, Ginger, and Garlic — The trio that makes it come alive. Fresh is always best.

  • Maple Syrup — Adds a touch of sweetness to balance the lime, ginger, and spice.

How to Use It

This sauce thickens as it chills, so add a splash of water before using.
Try it on:

  • Roasted or steamed vegetables

  • Grain or noodle bowls

  • Simple green salads

  • Rice-paper rolls or lettuce wraps

  • Pizza or flatbread

Make-Ahead Tip

Keeps up to 5 days in the fridge. Stir or shake before using.

Easy Coconut Peanut Sauce

A creamy, digestion-friendly coconut peanut sauce made with real ingredients. Perfect for noodle bowls, salads, roasted veggies, and grain bowls. Naturally dairy-free, gluten-free, and vegan.

Prep Total Yield 1 ½ cups

Ingredients

  • ½ cup creamy, unsweetened peanut butter
  • ½ cup canned full-fat coconut milk (shake before measuring)
  • 2 tablespoons fresh lime juice
  • 1 tablespoon soy sauce (or coconut aminos for paleo)
  • 1 tablespoon hot sauce
  • 1 tablespoon pure maple syrup (or honey/agave)
  • 1 tablespoon freshly grated ginger
  • 2 garlic cloves, minced
  • Sea salt, to taste
  • Water, as needed to thin

Method

  1. Add all ingredients to a medium bowl and stir until smooth, adding water a tablespoon at a time until pourable.
  2. Transfer to a jar or airtight container. Store in the refrigerator for up to 5 days.
  3. If the sauce thickens, stir in a teaspoon or two of water before serving.
Notes: For paleo or peanut-free: substitute almond butter for peanut butter and coconut aminos for soy sauce. Add extra salt to taste since coconut aminos are milder. Keeps up to 5 days in the fridge. Stir before serving.
