Ingredients

  • ¼ cup melted extra virgin coconut oil
  • 3 tablespoons pure maple syrup (or sugar-free alternative)
  • ¼ cup cocoa powder
  • ½ teaspoon pure vanilla extract
  • ⅛ teaspoon salt, plus more to taste
  • Freeze-dried raspberries (or fresh/frozen; see notes)

Method

  1. In a mixing bowl, whisk together melted coconut oil, maple syrup, and vanilla extract until combined.
  2. Add cocoa powder and salt, stirring until smooth and glossy with no clumps remaining.
  3. Pour into a silicone mold, muffin tin, or parchment-lined pan. Add raspberries and gently press them in.
  4. Freeze until firm, about 30 minutes. Pop chocolates out of the mold and store in the freezer or fridge.
Notes: To make this recipe sugar-free, omit maple syrup and use a small amount of stevia or monk fruit. If using fresh or frozen raspberries, store chocolates in the freezer. Coconut oil melts at room temperature — keep chilled until ready to serve.
