Vegan Seed Cycling Brownie Bites
Chewy, chocolatey vegan brownie bites packed with fiber, minerals, and essential fatty acids to support digestion and hormone balance.
Ingredients
- 1 cup raw, unsalted pumpkin seeds or raw, unsalted sunflower seeds (see notes)
- 1 cup raw flaxseeds or raw sesame seeds (see notes)
- 1 cup raw walnuts
- 3 cups pitted Medjool dates, packed
- 1 cup cocoa powder, plus more for rolling
- 1 teaspoon pure vanilla extract
- ½ teaspoon sea salt, plus more to taste
Method
- Grind the seeds in a coffee grinder or high-speed blender until finely ground.
- Add ground seeds, walnuts, dates, cocoa powder, vanilla, and salt to a food processor. Process until the mixture resembles coarse sand and sticks together when pressed between your fingers.
- If too dry, add warm water 1 teaspoon at a time until the right consistency is reached.
- Scoop heaping tablespoons and roll into balls. Coat lightly with cocoa powder.
- Freeze bites on a plate in a single layer, then transfer to an airtight container and refrigerate.
