Dairy-Free Shrimp Pasta Alfredo

Ingredients

Dairy-Free Alfredo Sauce

  • 1 cup raw, unsalted cashews
  • 2 garlic cloves
  • Juice of 1/2 large lemon
  • 2 tablespoons nutritional yeast
  • 1 heaping teaspoon onion powder
  • 1 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 3/4 cup water

Shrimp and Pasta

  • 6 oz pasta (gluten-free if desired)
  • Extra virgin olive oil
  • 1 lb shrimp, peeled and deveined
  • 2 garlic cloves, minced
  • Pinch red pepper flakes (optional)
  • 8 oz zucchini noodles (optional)
  • Fresh parsley, for garnish

Method

  1. Boil and soak cashews: Fill a small saucepan with water and bring to a boil. Add the cashews, turn off the heat, cover, and let soak for 15 minutes while you prep the rest of the recipe.
  2. Blend the alfredo sauce: Drain the cashews. Add to a high-speed blender with garlic, lemon juice, nutritional yeast, onion powder, salt, pepper, and 3/4 cup water. Blend until smooth and creamy. Set aside.
  3. Cook the pasta: Prepare according to package directions. Drain and set aside.
  4. Sauté shrimp: Heat a drizzle of olive oil in a large skillet over medium-high. Add shrimp and cook until pink and opaque, about 3–5 minutes. Add minced garlic and optional red pepper flakes; sauté 1–2 more minutes. Add zucchini noodles (if using) and cook just until softened.
  5. Combine: Add cooked pasta to the skillet. Pour in the cashew alfredo sauce (start with half and add more as desired). Toss to coat and season to taste with extra salt and pepper.
  6. Serve: Divide among bowls and top with chopped parsley or lemon zest for brightness. Enjoy warm.
