Ingredients

Sweet-Potato Mash
  • 1½ lbs sweet potatoes, peeled + chunked
  • 1 Tbsp extra-virgin olive oil
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp sea salt
  • 2 Tbsp non-dairy milk (plus more as needed)

Filling
  • 1 lb grass-fed ground lamb or beef (omit for vegan)
  • 1–2 (15 oz) cans chickpeas, drained (see notes)
  • 1 Tbsp extra-virgin olive oil
  • 1 yellow onion, chopped
  • 1 red onion, chopped
  • 2 cloves garlic, chopped
  • 1 Tbsp grated fresh ginger
  • 1 tsp sea salt
  • 1 tsp cumin
  • 1 tsp cinnamon
  • 1 tsp chili powder
  • 1 tsp honey (optional)
  • 1 (28 oz) can plum tomatoes, drained + chopped
  • ½ cup stock (veg/chicken/beef)
  • ½ cup currants or raisins
  • ½ bunch cilantro, chopped

Method

  1. Mash: Boil sweet potatoes ~15 minutes until tender. Drain; mash with oil, cumin, garlic powder, salt, and milk until creamy.
  2. Filling: Heat oven to 350 °F. Brown meat (if using); remove. Sauté onions, garlic, ginger, salt, and spices 8–10 minutes. Add tomatoes, stock, honey; simmer 10 minutes until thick.
  3. Stir in chickpeas, raisins, cilantro; season to taste. Return meat (if using).
  4. Bake: Spread filling in a 12×8″ dish, top with mash. Bake 40 minutes until lightly golden. Garnish with cilantro.
Notes: Use 1 can chickpeas for the meat version, 2 for vegan, omit for paleo. Freezes and reheats well.
