Ingredients

  • 1 green apple, cored and quartered
  • 4 celery stalks, roughly chopped
  • 1 cucumber, peeled and roughly chopped
  • 1-inch piece fresh ginger (more to taste)
  • 1 lemon, peeled
  • ½ small bunch fresh parsley
  • 1 handful leafy greens (kale, baby spinach, or romaine), optional
  • Cold water, enough to just cover the produce

Method

  1. Add the apple, celery, cucumber, ginger, lemon, parsley, and greens (if using) to a high-speed blender.
  2. Pour in cold water until the produce is just covered. Blend on high until completely smooth, stopping to stir or add a splash more water if needed.
  3. Place a nut milk bag (or layered cheesecloth) over a large bowl or wide-mouth pitcher. Pour the blended mixture into the bag and gently squeeze to strain out all the juice, leaving the pulp behind.
  4. Transfer the juice to a glass and drink right away, or refrigerate in a sealed jar for up to 4 days. Shake before serving.
Notes:
No nut milk bag? Use cheesecloth layered 2–3x to keep the pulp from seeping through.
Make it stronger: add extra ginger or a handful of cilantro.
Make it milder: add more cucumber or water and extra lemon.
Best enjoyed fresh, but will keep in the fridge for 3–4 days.
